Directions: Mix 1 cup Milk, 1 large egg, 2 TB of canola oil and 1 tsp of vanilla essence (optional) until well combined.  Gradually add 200g of pancake mix and whisk until smooth.  Preheat griddle or frying pan on medium high heat and season with vegetable oil or melted butter.  Pout 1/3 cup (60ml) of batter onto hot griddle or pan, cook until bubbles appear on the top and the bottom is golden brown.  Flip pancakes and continue cooking until second side is golden brown.  Enjoy immediately with butter and maple syrup.

Ingredients: Rice Flour, evaporated cane juice, corn flour, tapioca starch, corn starch, methylcellulose, guar gum, xanthan gum.
